Easter Meal Idea: Stuffed peppers with healthy sunflower and vegetable pate

This recipe is one of the most delicious ones. Pate is done in 10 minutes (if you don’t count the pre-soak of sunflower and nut overnight). You can serve it to guests spread on bread or salted chia crackers.

For this pate you need the following ingredients:
1/2 cup of sunflower seeds soaked overnight,
1/2 cups of nuts soaked overnight
1/2 of a small onion
1 clove of garlic
juice made of half of a lemon or lime

Mix all this with the vinegar (you can do without it), some parsley, 1 teaspoon of mustard and for better taste, the Himalayan or some other healthier sea salt.

If you want stuffed peppers, you need 2-3 smaller peppers that you can cut into halves or quarters. You can also just clean them from seeds and stuff the whole peppers with pate.

Avocado pate

Ingredients:
1 avocado
1 teaspoon of lemon juice
1 teaspoon of olive oil
1 clove of garlic
dill
some Himalayan salt (optional)

Chop the avocado with a fork, add the spices, lemon juice, and olive oil. Mince the garlic and mix everything. You can pour everything into a chopper or blender and fade. If you do not add lemon, the spread can oxidize quickly, so it is better to add it.
