Quick Vegan Soups


The vegan diet is very rich and varied, and it gives you plenty of options to make yourself healthy meals, suitable for every part of the day. If you want to eat something light and refreshing, but also tasty and healthy, the soup is an excellent choice. Soup is easy and quick to prepare and it does not require much of your time. For all those who are vegan or want to start a vegan diet, these recipes will give you an idea of how to prepare something new and delicious at home.

Avocado and spinach soup

1/2 of avocado
2 cloves of garlic
1/2 of onion
1/4 cup of edible yeast
1/4 cup soy sauce
1 cup of vegetable milk
a pinch of sea salt and pepper
1 handful of spinach
5 olives

Put all the ingredients in a blender and blend until the mixture become smooth and creamy. You can serve it as a warm or cold soup.

Tomato and berries soup

2.5 cups of chopped tomato
1.5 cup of raspberries and blackberries
fresh lemon juice (made of half of lemon)
2 basil leaves
1 cup of fresh orange juice

Put all the ingredients in a blender and blend until the steam comes out of the blender (about 6 minutes, depending on the strength of the blender) or you can blend for 1 minute and eat cold soup.

Green soup

1 cup of chopped celery
1/3 cup of leek (green part only)
1/2 squeezed lemon juice
1/8 avocado
1 date
2.5 cups of spinach
1/2 cup water

Put all the ingredients in a blender and blend until you get a homogeneous mixture. Pour the soup in the bowl and decorate it pinch of chopped leek.

Tomato soup

2 carrots
4 tomatoes
1 cup of peanuts
1 clove of garlic
1/2 teaspoon of sea salt
1/2 cup of parsley

Chop all the ingredients, blend them until you make one fine, tasty soup. Decorate the soup with parsley leaves.

Vegetable soup


1 cup of barley

1 pepper

1 beetroot

1 handful of spinach

2 tablespoons of sesame seed

1 leek (green part only)

1/2 teaspoon of sea salt

1/2 tablespoon of dill

Enjoy this healthy mix, like a cold or warm meal.

Sweet corn, garlic, and tomato soup


1 tomato

1/3 cup of sweet corn

1-2 cloves of garlic

1 handful of nuts

1 tablespoon of hemp seed

1-2 teaspoons of soy sauce

1.5 cup of water

1/2 – 1 avocado

a pinch of sea salt and pepper

a pinch of dill

Put all ingredients except avocado in a blender and blend it for 6 minutes (if you want the warm soup to use the warm (or hot) water for preparation), or you can blend with cold water and eat cold soup. After that, pour the soup into a plate and cut the avocado into small pieces and put it in the soup along with the spices. Decorate the soup with 1 teaspoon of chopped nuts and few sweet corns.
