Skillets are a classic diner breakfast, a load of eggs, bacon, cheese, and veggies filled with savory flavors.
We took this classic breakfast and turned it vegan!
The skillet was extremely easy to cook with a quick prep and cook time to make for a filling and appetizing breakfast when you’re in a rush to get to work or get the kids off to school.
This flavorful skillet mainly uses ingredients found in the average household with some added vegan protein and substitutes.

Prep time – 5 minutes
Cook time – 10 minutes
Total time – 15 minutes
Ingredients
2 tbsp extra virgin olive oil
1/4 cup yellow onion
1/2 cup green pepper
1/2 cup white mushroom
1 cup baby spinach
1/4 cup green onion
1/2 cup vegan shredded cheese
2 vegan breakfast sausages (I used Beyond links)
1 cup vegan eggs (I used Just Egg)
1/2 tbsp paprika
1/2 tbsp black pepper
1 pinch of salt
How to cook the skillet
Heat a pan on low heat with the extra virgin olive oil. While the pan is heating up, chop the yellow onion, green pepper, and white mushroom. Put the chopped vegetables and the baby spinach in the pan. Add in the breakfast sausage and continue to cook the vegetables and sausage until all are golden brown.
Once the ingredients are golden brown, pour in the vegan eggs and the shredded vegan cheese. Add the seasonings and cook until desired hardness.
Once the eggs are cooked to your liking, remove skillet from pan, plate the eggs, and add green onions on top as a garnish.
