With St. Patrick’s Day quickly approaching, what sounds better than vegan sausage and potatoes smothered in gray? This recipe uses your favorite vegan sausage and a quick brown gravy.
Ingredients:
1 package of 4 vegan sausages
¼ cup flour
½ cup of sliced onion
1¾ cup vegan beef broth (vegetable broth works in a pinch, just add 1 tbsp soy sauce)
1 tsp garlic powder
1 tbsp nutritional yeast
½ cup Unsweetened Almond Milk (or any other plant milk)
6 large potatoes, peeled and cubed
¼ cup, plus an (optional) 1 tbsp. vegan butter
Salt and pepper to taste
In a large skillet on medium high brown your vegan sausages on all sides and cook until done. Remove sausage from skillet and reduce heat to medium. Add onion to fat in pan. Cook until soft and translucent.
Meanwhile, boil your cubed potatoes and turn off heat when done.
Separately, combine ¾ cup broth with 1 tsp garlic powder and nutritional yeast. Set aside.
Add 1 tbsp of butter to pan (if desired and if you do not have enough fat in the pan from your sausages) and allow to melt. Sprinkle in flour and whisk. Once absorbed, slowly pour in the broth mixture, whisking constantly until thickened. Reduce heat to low to keep warm. Salt/pepper to taste.
Drain potatoes. Add back to pot. Add ¼ cup butter and ½ cup almond milk, and mash. Add salt and pepper to taste.
